Beginnings in Antiquity: Method of Preservation
Narezushi is the oldest type of sushi; it has its origin 1,000 years back in Southeastern Asia and then in Japan. The fish was preserved in fermenting rice, making it possible to store the food for months. No one had to eat rice because it was made only for fish.
Time of Edo – Birth of Modern Sushi
In the year 1800, during the Edo period, sushi was turned into an immediate and tasty street food in Japan. This chef was named Hanaya Yohei, bringing the idea of nigiri sushi, which was fresh fish caught and topped on rice seasoned to allow it to be prepared and enjoyed straight away. This became a snack for workers who rushed into the streets of Tokyo.
Post-war Trend- Sushi Spreading From the Nation to the World
During this period, advances in refrigeration and global trade allowed sushi to travel out of Japan. By the 1960s and ’70s, sushi restaurants began to spring up in America and Europe, adjusting tastes to local tastes with prey such as California rolls, introducing sushi to many.

Sushi is seen and tasted in the highest restaurants in the world, as well as what it brings to the table in the twenty-first century. It takes a long time for master sushi chefs, or itamae, to master their craft.
